  • 4 – Chicken quesadillas, cut into 4 triangles
  • 4 – Beef quesadillas, cut into 4 triangles

  • 5 Chicken flautas, cut into 3 taquitos

  • 5 Beef flautas, cut into 3 taquitos

  • Shred lettuce and make a mountain of lettuce in the middle of the platter (also in an oval shape). Begin by placing quesadilla triangles on either side of the mound of lettuce, beef on one side, chicken on the other (long side). Optional – Place cheese nachos or circular tortilla chips between quesadillas and the taquitos. Next, place taquitos on either side of platter, beef on one side, chicken on the other (short side). Place slice tomatoes, cut in half, with a slice of jalapeño on top of each all around base of lettuce mound. Finally, arrange the colors of the Mexican flag (green, white & red) on top of the mound of lettuce using 3 soufflé cups; one filled with red salsa, one with sour cream and the third with guacamole.

This is a true Party-Size Appetizer!
